We became flexitarian by stretching meat instead of removing it completely. Half meat, half beans in tacos or chili. More vegetables in pasta. It lowered grocery costs and nobody felt like dinner changed overnight.
Start with one or two meatless meals a week. Lentil bolognese, bean chili, chickpea curry and black bean tacos are easy because they feel hearty. You do not need fake meat for every meal.
