Do the famous thing, then leave space to wander. You do not have to reject tourist attractions to be a good traveler. The problem is when every hour is a line, a photo spot and an overpriced meal.
My simple rule is to walk 10 to 15 minutes away from the major attraction before eating. Restaurants directly beside landmarks pay for location, not always quality. A small walk usually changes everything.
