I do hide vegetables in sauces sometimes, but I also serve visible vegetables without pressure. If everything healthy is hidden, kids never learn to accept the real thing. Repeated exposure matters, even when they ignore it for months.
Build-your-own meals work best for us. Taco bowls, pasta bowls, baked potato bar and rice bowls let the kids choose toppings. I include vegetables, but I do not force every item. They eat more when they feel some control.
