I would pick the F-35 because of its sensor fusion and information-sharing capabilities. Modern air combat is about awareness as much as speed.
The J-20 is the aircraft I am most curious about. China has invested heavily in it and we still don't know the full extent of its capabilities.
The Su-57 gets overlooked too often. It may not have the production numbers of the F-35, but it remains an impressive fighter design.
